Aunt Cyndy’s Pumpkin Cookies

Ingredients
  

  • 2 cups shortening
  • 2 cups sugar
  • 1 can pumpkin (15 oz)
  • 2 eggs
  • 2 tsp vanilla
  • 4 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2-3 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp cloves
  • 2 cups raisins or craisins
  • 1 cup chopped nuts

Instructions
 

  • Cream shortening and sugar.
  • Add pumpkin, eggs and vanilla, beat well.
  • Stir together flour, baking powder, cinnamon, baking soda, nutmeg and cloves.
  • Add in salt, then mix well. Stir in raisins and nuts.
  • Place 2 inches apart on greased cookie sheet.
  • Bake at 250 F for 12 to 15 minutes.
  • Cool on rack.
  • Can be frosted with vanilla or cream cheese frosting.
